Jan used to be in the habit of sifting through books in bargain stores for me. I’m an avid reader and the only way to feed my appetite for books without getting us bankrupt is to look for bargains. Recently, he has been into our favorite haunts for himself as well. Food magazines have become so expensive too that he’s now into buying cheap cookbooks.
As a testament to his book hunting skills, he found a thick P50 recipe collection from a restaurant called Moosewood. That is where this recipe is based on and as usual, because we don’t have complete ingredients, my personal cook has had to improvise.
Ingredients:
1 cup squash, thinly sliced
2 medium potatoes, thinly sliced
1 medium carrot, thinly sliced
1 small onion, sliced
1 cup quick melt cheese, sliced
134 ml can evaporated milk
2 cups stock or water
1 cut butter
4 pinches salt
2 tbs. oil
1/2 tsp black pepper
Pinch of turmeric
Spring onions
Procedure:
1. Heat oil in a pan and saute onions until translucent. Add the potatoes, carrots, squash, black pepper and turmeric.
2. Pour in the stock or water and simmer over low heat for 15 minutes and until the vegetables are cooked. Slowly add the milk and the cheese. Mix thoroughly.
3. Put the entire mixture into a blender and puree.
4. Reheat the soup, add salt, top with spring onions and serve.
Wife’s Verdict:
I’ve never been this excited about soup in years! Traditional Filipino soup is usually watery in consistency so it was a treat to have creamy soup that’s both tasty and nutritious. Our daughter who has to be forced to eat vegetables, sipped this in top speed.
The original recipe name actually stresses the cheese ingredient more than anything else but we had to add the words “potato” and “squash” in Jan’s version because there were more potatoes than any other ingredient and because the predominant taste was of squash. In fact, it tasted so much like creamy squash that it reminded me of my mom’s squashed squash recipe that was also one of my favorites as a kid.
