When I first became a part of Jan’s family, one thing that stood out for me was the fact that they’re a family of incurable snack eaters. Snack attacks are entertained any time of the day, even immediately before or after main meals. In time, I began to fit in perfectly with their eating habits. As a result, my mother says I have considerably grown horizontally.
This recipe is a product of another one of those early morning snack pangs that creep up right before breakfast.
Ingredients:
1/2 bell pepper, chopped
1/4 onion, chopped
1/4 tomato, chopped
1/2 tsp. sesame seeds
1/4 tsp. basil leaves
Salt and pepper
50 grams quick melt cheese
1 tbsp. butter
2 tbsps. parsley, chopped
Crackers
Procedure:
1. Roast sesame seeds for 30 seconds.
2. Mix bell pepper, onion, tomato, sesame seeds and basil leaves.
Season with salt and pepper.
3. Arrange crackers on a plate and top each with the mixture.
4. In a pan, melt butter and cheese in low heat.
5. Pour the melted cheese over the cracker toppings. Garnish with parsley. Serves 2.
Wife’s Verdict:
Almost anything with melted cheese on it is a winner for me but what I love most about this snack is the toppings. I sank my teeth onto healthy bell pepper, onions and tomato that was tasty even without meat or artificial flavoring. This would be a perfect healthy snack for picky little eaters. Oh, and yeah, it’s a perfect snack to prepare too for parents who can’t cook.
