This blog should have been updated weeks ago but Jan and I live in Cagayan de Oro. As most of the world already knows, the city is one of several recently hit hard by flash floods that killed hundreds of people and displaced thousands more. As images of loss and suffering flooded the internet, it seemed inappropriate to sit by, blog and pretend that nothing happened.
Out of solidarity with our fellow Kagay-anons, I opted to stay out of blogging for awhile and help in whatever way I can. Because I’m admittedly physically weak and will probably not survive the demands of volunteer work, I’ve given some time instead to spreading the word about the calamity and how to help through online portals.

As you can imagine though, Jan and I need to get back on track with blogging at some point. Since the floods also brought with it a severely protracted water crisis, the personal cook and I have been unable to whip up new kitchen ,creations. This here is one of Jan’s old recipes that uses leftover longganisa. With so many people going hungry, it’s only fitting that we don’t let anything go to waste.
Ingredients:
500 g pasta
6 pcs. cooked longganisa/spicy pork sausage
6 garlic cloves, chopped
7 tbsp. olive oil
2 dried chillies, chopped
Salt and pepper
Parsley, chopped
Procedure:
1. Cook pasta according to package instructions.
2. Cut cooked longganisa into strips. Set aside.
3. Heat oil in a pan and saute garlic and chillies. Add the longganisa strips.
4. Toss pasta under low heat until oil is evenly spread.
5. Put on a plate and top with parsely. Serve at once.
Wife’s Verdict:
This dish is pleasantly hot. You probably won’t hit the roof with it but you will break into a mild sweat. Simple but tasty. This is exactly what you need when you’re looking for a wake me up dish.
